
This is what we did in early September 2018 – zucchini pickles, pickles jalapeños, giardiniera, and tomato sauce. Notice that the majority of canned goods were pickled. Quite different from this year. No zucchini pickles or pickled jalapeños yet. I am making the giardiniera fresh and storing in the refrigerator every few weeks. But today we are doing a massive batch of tomato sauce for canning. We have two kettles going. There are jalapeños waiting for processing as well as pesto to be made. Some things will get finished today, others tomorrow.
Yesterday somebody asked for the recipe for cucumber kimchi, here it is:

Last night we listened to President Biden. What a great speech. He covered the threats to democracy well. He handled hecklers well. And he came across in a very presidential manor. It’s nice having a cogent speaker and sane person in the White House.

Ooooh I’m going to try that cucumber kimchi cousin. I love that stuff!!! I found the best at a tiny tiny hole in the wall in Leesville , Louisiana. I’m pretty sure it’s the best I’ve ever had. Hope all is well with you and Susan. Enjoy your weekend ❤✌️
