
Recently, we were visiting Mike and Deb in Petosky. They have several apple and pear trees. One evening, after a walk with a beautiful sunset Susan picked some apples and pears that we brought home. The next morning, one of the apples became part of breakfast.

I peeled the apple, removed the core and sliced into thin circles that I then dipped into pancake batter. Thus, the apple became part of the pancakes for breakfast.

But this late summer Susan picked lots of apples from nearby trees and canned a lot of apple sauce which is now in the pantry with the vegetable stock (the darker red on the right) that she recently made.

But for both of us, cooking depends, not only on the canned items that we might be using but the various herbs and spices that we need. So we have quite an extensive “spice rack,” that is basically a 4′ x 6′ wall near the kitchen.

But the basement is where we store many things for winter and spring use. That’s where much of our canned goods go, as well as garlic and winter squash. Right now the garden is heavy with squash. We just started picking butternut squash and g=have had spaghetti and delicata squash for some time.

The tomatoes are near the end. Green beans have another week or so before they are done. The purple sweet peppers still have one or two waiting ripening and there are a lot of jalapeños and cayenne-like peppers still to harvest. Before long, the garden will look like it did earlier in the year when we started planting.

The above photo is the bed that we had delicata squash, roma tomatoes, cucumbers and hot peppers in. It will look that way again in a few weeks.
